Soba with Chicken and Oyster Mushrooms

A variation on a classic Japanese dish using soba (buckwheat noodles) and chicken. Perfect as warming dish for winter.

Ingredients

  • 80 - 100 g Soba (buckwheat noodles)
  • 150 g Chicken thigh fillets
  • 100 g Oyster mushrooms
  • 80 g Onion red or brown
  • 1 Shallot
  • 2 tbsp Soy sauce
  • 2 tbsp Mirin
  • 2 tsp Green Mushroom Seasoning
  • 600 mL Water
  • 1 Boiled egg sliced
  • Shichimi togarashi

Instructions

  • Cook soba in plenty of boiling water for 2 minutes (or according to instructions on the soba packet). Drain and set aside.

  • Cut the chicken thigh fillets into bite size pieces.
    150 g Chicken thigh fillets
  • Slice oyster mushrooms into two, if they large. Otherwise use them as is.

  • Cut onion into 1 cm slices.
    80 g Onion
  • Cut shallot into thin slices.

  • Place water in a pot. Add the Green Mushroom Seasoning and bring to boil. Add the chicken pieces.
    2 tsp Green Mushroom Seasoning, 600 mL Water

  • Add mirin and soy sauce.
    2 tbsp Mirin, 2 tbsp Soy sauce

  • Add mushrooms and onion. When they are cooked, add shallots and turn off the heat.
  • Place desired amount of soba into bowls and, using a ladle, add the soup to the bowl.
  • Add the slices of boiled egg

  • Garnish with Shichimi Togarashi, if desired
